Vanilla Marshmallow Krispie Treats

I have been making Rice Krispie Treats for as long as I can remember. It was always one of my go to snacks because it was so simple to make. I hated having to wait while they sat in the refrigerator to set and then taking them out to let them sit because they were too hard. When you bit into them, it would tear into the roof of your mouth.


The thing I love about this recipe is that they are so fluffy. The added marshmallows make these Vanilla Marshmallow Krispie Treats irresistible. It makes little pockets in the treats so that they are not rock solid. I also leave them sit on the counter to set instead of putting it in the fridge so that when they are ready to eat. These treats come out so soft and the vanilla adds just a little bit of extra flavor.



Vanilla Marshmallow Krispie Treats

Ingredients

5 Tbsp Butter
1/2 tsp Vanilla Extract
8 C Mini Marshmallows
6 C Rice Krispies

Grease a 9x9" baking dish. In a heavy bottomed pan melt the Butter over medium heat. Add the Vanilla Extract and 6 Cups of Mini Marshmallows to the pan. Stir to melt so that it does not stick to the bottom of the pan and burn! This is one instance that a toasted marshmallow does not have a great flavor.

Once Marshmallows are melted stir in the Rice Krispies. Mix until cereal is evenly coated. Then add remaining 2 Cups of Mini Marshmallows. Fold these in gently; you want them to remain semi-solid.

Transfer the mixture to your baking dish and gently push it down. You don't want to smash the added marshmallows so just gently push it into place. I like to put a little oil on my hands and then push it down to distribute it. That way it doesn't stick to anything! Let sit for 30 minutes to 1 hour. Then cut up into squares and serve.

  1. Mmmm, adding vanilla to rice krispie treats would be SO GOOD! It's such a simple way to dress them up, but I bet it's a game changer. I'm definitely going to do this next time.

  5. YUM! I love Rice Krispies--they're one of the things I can cook with consistency! I've never tried putting vanilla in them, but I bet that would make them even tastier. :)
